Nil Desperandum is dedicated to producing Australian Certified Organic rums using only the finest, sustainably sourced ingredients. Every bottle reflects our meticulous process—from harvesting subtropical rainwater to distilling in our copper stills. Our rums are soft, balanced, and full of character, consistently delivering an exceptional taste experience.
Distillery Experiences:
We welcome guests to experience our craft firsthand at our Distillery Door. Our offerings include:
- Distillery Tasting Experience – $15pp. Sample a range of our spirits, including a tasting glass to take home and discounts on bottles.
- Cocktail Masterclass – $99pp. Make and drink three cocktails with guidance from a master mixologist, paired with a grazing platter, take-home recipe cards, and bottle discounts.
- Founders’ Tour – $159pp. This tour includes a deep dive into the science of distillation with one of our co-founders, a tasting of our spirit range, take home a bottle of your choice from our core range of spirits and a set of etched glasses.
We pride ourselves on being a family-friendly venue—kids and dogs are always welcome! Guests are encouraged to pack a picnic and enjoy the relaxed atmosphere of our terrace (no BYO alcohol).
